Zucchini Bread from Beard on Bread

3 eggs 3 cups flour 1 ½ cups sugar 1 tsp. salt 1 cup oil 1 tsp. baking soda 2 cups grated peeled zucchini, drained ¼ tsp. baking powder 3 tsp. vanilla 3 tsp. cinnamon 1 cup coarsely chopped nuts

Beat eggs until light and foamy. Add sugar, oil, zucchini, and vanilla. Mix lightly but well. Combine dry ingredients and add to the mixture. Stir until well blended. Add nuts and pour into two 9 x 5 x 3 inch loaf pans. Bake in preheated 350o oven for 1 hour. Cool on a rack.
